Garvita's Kale Salad Rice

Ingredients 

2cups rice(or enuf for 2 people)
2 zucchini 
1 capsicum
1/2 bell pepper red & yellow (each)
2 med onions
1/2 bunch kale leaves(washed and chopped)
2 tomatos
1/2 cup corns
Juice of 1 lemon
Oregano & mixed herbs( as per taste)
Salt 
5-6tbs olive oil

Pre-heat the oven to 350 degrees(175)
Spray/Grease a baking tray
Wash & slice onions, zucchini,capsicum, and bell pepper. Spread them on the baking tray and sprinkle with salt and olive oil. Bake till cooked.
In a bowl marinate chopped kale leaves, tomatoes, lemon juice and salt.
Wash the rice and cook them in a pressure cooker with corns, oregano, mixed herbs, salt and 2-3tbs olive oil(can also use ghee).

Once the rice is cooked and its safe to open the cooker mix all the ingredients together while they are still hot into a large bowl and serve.
