Garvita's Cinnamon Apple Pancakes

Ingredients 
  1. 1 1/4 cups wholemeal self-raising flour
  2. 1 tablespoon caster sugar
  3. 3/4 teaspoon baking powder
  4. 1/2 teaspoon ground cinnamon
  5. 1 cup reduced-fat milk
  6. 2 eggs
  7. 1 teaspoon vanilla essence
  8. olive oil cooking spray
  9. 2 pink lady apples, quartered, cored, thinly sliced
  10. 4 scoops low-fat vanilla ice-cream, to serve
  11. Step 1
    Sift flour, sugar, baking powder and 1/2 teaspoon cinnamon into a bowl. Make a well in the centre.
  12. Step 2
    Using a fork, whisk together milk, eggs and vanilla in another bowl. Pour into well and mix lightly with a fork until just combined (do not overmix).
  13. Step 3
    Heat a large, non-stick frying pan over medium heat. Spray lightly with oil. Pour 1/4 cup batter into pan and gently spread. Working quickly, top batter with 1 layer apple slices. Cook 2 pancakes at a time for 2 minutes. Carefully turn and cook for a further 2 minutes or until firm to touch. Serve warm sprinkled with a little of the remaining cinnamon and a scoop of ice-cream.

Garvita's oooh so healthy pizzzzza base!

Ingredients 

1 full Cauliflower 
1 egg
1tsp oregano
2tsp dried herbs
Salt
Red Chilli powder(optional)
Shredded mozzarella (optional)
Square muslin cloth

Directions

1)  Cut and clean the florets grind it. In a covered bowl microwave it for 4 minutes. Place it on a clean muslin cloth and wring out the excess water(important for a crisp base). Hang it till cool and well drained.
2)  Pre heat the oven to 250.
3)  Now place the cauliflower in a bowl and add egg, salt, chilli powder, oregano, dried herbs and handful of shredded mozzarella. knead all the ingredients together.
4)  Now on a baking paper, spray a little olive oil and spread the mixture on it, do not make it v thick or too thin(use an inverted pan for better support and a spatula to even out the base)
5) Pop it into the oven for 20mins or till golden
6) Be creative with the toppings and enjoy a healthy pizza.

1 cauliflower makes 1 medium size pizza.

Suggestion do not let your better half/kids/parents know what the base is made off before hand or its gonna be a task to get them to eat it :P:P

Garvita's Indoor s'mores

Ingredients

2 whole graham crackers, broken in half
4 marshmallows
2 tablespoons bittersweet chocolate chips, melted

Instructions 

1. Position oven rack in the upper third of the oven; preheat.

2. Place graham cracker halves on a baking sheet; top each with 1 marshmallow. Bake, with the oven door ajar and watching carefully, until the marshmallows are golden brown, 45 to 75 seconds. Remove from the oven and drizzle each S’more with a little melted chocolate.
P.S: To melt chocolate: Microwave on Medium for 1 minute. Stir, then continue microwaving on Medium in 20-second intervals until melted, stirring after each interval. Or place in the top of a double boiler over hot, but not boiling, water. Stir until melted.

Garvita's Healthy Peach Sundae

INGREDIENTS

2 peaches, halved and pitted
1 teaspoon canola oil
2 scoops nonfat vanilla frozen yogurt or fruit sorbet
1 tablespoon toasted unsweetened coconut

STEPS

Preheat grill to high. Brush peach halves with oil. Grill until tender. Place 2 peach halves in each bowl and top with a scoop of frozen yogurt (or sorbet) and coconut.

Garvita's Yummy Mummy ke Black Choley

Ingredients
1cup chole soaked overnight (if no time for that soak them for 30mins/1hr in hot water and add 1/2 tsp baking soda while cooking)
1/4cup chana dal
2 cups black tea water
2med size onions sliced
5-6 green chillies
1inch ginger sliced
6-7 tsp chole masala(can add more)
3tbs oil
1tsp cumin seeds
Salt

For Garnishing
Fresh coriander
Ginger julienne

Instructions
1) In a pressure cooker add chole, chana dal, onions and salt in tea water. Should be cooked in about 4-5 whistles on low flame.
2) In a pan heat oil add cumin seeds, green chillies and ginger. Cook till there is no raw smell. Add chole masala n cook for another minute.
3) Add cooked chole to this pan and mix well till all d masala blends. Keep on flame for a 5-7 minutes.
4) Garnish and serve hot. (Tastes even better the next day) :p

P.S: black tea water: in a vessel boil about 2 1/2 cups water with 2-3tsp tea. Don't make it very strong or else chana may become bitter. Strain and use this water to boil.

Garvita's Healthy Chicken Taco

Ingredients
1 tablespoon olive oil
1/2kg ground chicken
2 cloves garlic, minced
1 onion, diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 (8-ounce) can whole water chestnuts, drained and diced
2 green onions, thinly sliced
Kosher salt and freshly ground black pepper, to taste
1 head lettuce
Instructions
  • Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
  • Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar and ginger  until onions have become translucent, about 1-2 minutes. Stir in chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
  • To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.

Garvita's Mixxed Berries Cookies

Ingredients 
1 cup instant oats
3/4th cup whole wheat flour (can use other of choice)
1/2 cup raw organic honey or maple syrup or sweetener of choice 
1 tsp vanilla essence 
1 tsp cinnamon powder
1/8 tsp salt
1/2 tsp baking powder
2 tbs melted unsalted butter or coconut oil
1 egg
6 tbs mixed berries 

Makes:15/17 cookies

1) Mix oats, flour, cinnamon, salt and baking soda in one bowl
2) Mix egg n melted butter n then add honey till well combined. Add the dry mixture and then fold in d berries.. Mix till combined well.
3) Refrigerator for min 30mins(keep covered)
4) Pre heat the oven to 325.
5) Line a tray with baking sheet or use silicon mat.
6) Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten to about half of their original height using a spatula. Bake at 325°F for 10-12 minutes. Cool on the pan for 10 minutes before transferring to a wire rack.
P.S: can use other combination like chocolate chip n raspberry/ cranberry, Apple, peach etc etc.
This time I used rolled oats instead of instant oats so it took about 18-20mins longer to bake.

Garvita's Green Juice

Ingredients
4 cups baby spinach
1 English cucumber
½ bunch of parsley (about 1 cup lightly packed)
½ bunch of cilantro (about ½ cup lightly packed)
Juice from ½ lemon
Directions
 If you have a ‘low’ setting on your juicer, juice all items in the recipe but the lemon juice. When complete, add lemon juice, stir and enjoy!
Notes
Want to add fruit to this? Try adding 2 apples. It’s amazing!

Garvita's Banana Bread

Ingredients 
⅓ cup melted coconut oil or extra-virgin olive oil or high quality vegetable oil
½ cup honey or maple syrup
2 eggs
1 cup mashed bananas (about 2½ medium or 2 large bananas)
¼ cup milk of choice or water
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, plus more to swirl on top
1¾ cups whole wheat flour
Totally optional: ½ cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices...
Instructions
Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan.
In a large bowl, beat the oil and honey together together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 10 seconds in the microwave.)
Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you're adding any additional mix-ins, gently fold them in now.
Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. If you'd like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.

Garvita's Kale Salad Rice

Ingredients 

2cups rice(or enuf for 2 people)
2 zucchini 
1 capsicum
1/2 bell pepper red & yellow (each)
2 med onions
1/2 bunch kale leaves(washed and chopped)
2 tomatos
1/2 cup corns
Juice of 1 lemon
Oregano & mixed herbs( as per taste)
Salt 
5-6tbs olive oil

Pre-heat the oven to 350 degrees(175)
Spray/Grease a baking tray
Wash & slice onions, zucchini,capsicum, and bell pepper. Spread them on the baking tray and sprinkle with salt and olive oil. Bake till cooked.
In a bowl marinate chopped kale leaves, tomatoes, lemon juice and salt.
Wash the rice and cook them in a pressure cooker with corns, oregano, mixed herbs, salt and 2-3tbs olive oil(can also use ghee).

Once the rice is cooked and its safe to open the cooker mix all the ingredients together while they are still hot into a large bowl and serve.

Garvita's Banana Cookies

Banana Cookies

2 ripe bananas
1 cup rolled oats
1/4 cup walnuts, choco chips or peanut butter chips (or any mix of ur choice)
1-2 tsp of honey or coco powder(optional)

Preheat the oven to 350 degrees(175) 
Spray/Grease the cookie tray or line it with baking paper
Mash the bananas and mix in the oats and honey.
Fold in choco chips or a mix if your choice.
Place tablespoon full on the baking tray.
Bake for about 15mins or till slightly firm and browned.
Remove and let them cool completely.
Makes aprox 15-16 cookies. 

Garvita's Eggplant Raita

Ingredients:

1 eggplant ( sliced and grilled till soft)
1 1/4 cup Yogurt
1 tsp Dhaniya & Jeera powder
1/2 tsp Salt
1-2 Green Chillies (as per taste)
Coriander leaves 

Add all the ingredients to the blender and blend, keep it a bit coarse.
Eat as it is or give tadka with 1-2 TBS olive oil n jeera
.

Garvita's Berry Green Salad

Berry green salad !!
 
Baby spinach 1.5 cup
Strawberries 8-10 sliced
Crumbed feta cheese 1 TBS

Dressing ;
1-2 TBS Oliveoil
1 tsp Vinegar or Lime juice
Salt n pepper to taste
1 tsp Poppy seeds
2 tsp Sesame seeds
1/4 tsp Paprika

8-10 Chopped Almonds
1 Avocado chopped (optional)

Mix all the ingredients and enjoy a fresh summer salad!

Garvita's Over Night Oats

Serving Size: 2
Calories: 380 approx
Half cup frozen cherries
Half cup frozen raspberries
2/3 cup oats
200 gm (a cup) yogurt
Table spoon maple syrup

Above ingredients blended in blender
Then add 2 tbsp chia seeds n pop them in two jars. Leave in fridge overnight
Garnish with strawberries, granola and coconut. 

Garvita's Summer detox drink

Summer detox drink..
The nutritional aspects of these ingredients will be absorbed by the water, and it’s recommended to let this sit overnight for best results.


Ingredients

large pitcher of cold filtered water 
1 lemon thinly sliced
1/2 cucumber thinly sliced
small bunch cilantro (stems cut off)
small bunch Italian parsley (stems cut off) 
handful of frozen cranberries

Directions

Mix all ingredients together and refrigerate. Continue to refill with water throughout the day.

Garvita's Kale Salad

Kale salad


Ingredients for salad:


Kale leaves
1 apple ( any kind you like )
1 tbsp walnuts ( toast/raw)
1 tsp Goat cheese/ cream cheese ( optional)
1/2 tsp roasted Sunflower seeds  (optional)

Dressing:
olive oil
red wine vinegar/ balsamic vinegar
1 tbsp honey
Salt
mustard paste
(Don't have any fixed ratio to mix them it's all estimate)
add all dressing ingredients in a jar and shake well till mixed.
You can layer the salad by placing kale then apples, sprinkle walnuts cheese and seeds. Now add the dressing  and enjoy ur salad 

Garvita's Kale chips

Kale chips:


Wash 1/2 bunch


Remove stem


Dry (I use hair dryer)


Break into bite sized pieces


Add 1/2 tsp olive oil n seasoning


Mix well


Bake for 5-10 min at 160


But keep checking as they burn quickly

Garvita's Detox Special

Ingredients

2-3 cucumbers, large
2 apples
1/4  beet or a handful of strawberries (opt)
mint, to taste

Directions

Juice everything together in your juicer. Pour into two glasses with ice. Add a couple sprigs of mint for a garnish. Enjoy

Garvita's Mango ginger lemonade

Mango ginger lemonade 

Ingredients
1/2 mango (65 cal)
1 lemon (15 cal)
1tbs honey ( sweetener of choice)
1 thin slice of ginger
zest of 1 lemon
3-4 ice cubes

Directions

Reserve 1,2 lemon slices for decoration. blend the remaining ingredients in a blender.
