Aarti's Paleo Breakfast Muffins

INGREDIENTS
  • 9 large eggs
  • 8 ounces ground breakfast sausage
  • 1 red, green, or yellow pepper, I used a mix of colors because that is what I had
  • ½ cup frozen kale, chopped, handful if fresh
  • ¼ teaspoon pepper
INSTRUCTIONS
  1. Preheat oven to 350 degrees, spray a muffin tin with non-sticking cooking spray or use coconut oil. I used coconut oil. Set aside.
  2. Brown the ground sausage in a medium-sized pan over medium-heat.
  3. In a large mixing bowl, whisk the eggs and then add in the sausage, peppers, kale, and pepper. Pour the batter into the muffin tins, filling ¾ of the way. Bake for 20-25 minutes, my oven needed 23 minutes.
  4. Allow the muffins to cool for 5 minutes, use a knife to loosen from the sides.

Garvita's Cinnamon Apple Pancakes

Ingredients 
  1. 1 1/4 cups wholemeal self-raising flour
  2. 1 tablespoon caster sugar
  3. 3/4 teaspoon baking powder
  4. 1/2 teaspoon ground cinnamon
  5. 1 cup reduced-fat milk
  6. 2 eggs
  7. 1 teaspoon vanilla essence
  8. olive oil cooking spray
  9. 2 pink lady apples, quartered, cored, thinly sliced
  10. 4 scoops low-fat vanilla ice-cream, to serve
  11. Step 1
    Sift flour, sugar, baking powder and 1/2 teaspoon cinnamon into a bowl. Make a well in the centre.
  12. Step 2
    Using a fork, whisk together milk, eggs and vanilla in another bowl. Pour into well and mix lightly with a fork until just combined (do not overmix).
  13. Step 3
    Heat a large, non-stick frying pan over medium heat. Spray lightly with oil. Pour 1/4 cup batter into pan and gently spread. Working quickly, top batter with 1 layer apple slices. Cook 2 pancakes at a time for 2 minutes. Carefully turn and cook for a further 2 minutes or until firm to touch. Serve warm sprinkled with a little of the remaining cinnamon and a scoop of ice-cream.

Shamika's Whole Wheat Waffles

  • 1 1/2 cups Whole Wheat Flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 large egg
  • 1 1/2 cups lukewarm milk
  • 1/3 cup melted butter or vegetable oil

Instructions

  1. Preheat your iron while you make the waffle batter.
  2. Whisk together the flour, baking powder, salt, and sugar. 
  3. In a separate bowl, whisk together the egg, milk, and butter or oil. 
  4. Mix together the wet and dry ingredients, stirring just until combined. The batter will be a bit lumpy; that's OK.
  5. Cook the waffles as directed in the instructions that came with your waffle iron.
  6. Yield: 3 1/2 round Belgian-style (deep-pocket) 7" waffles.

Garvita's Over Night Oats

Serving Size: 2
Calories: 380 approx
Half cup frozen cherries
Half cup frozen raspberries
2/3 cup oats
200 gm (a cup) yogurt
Table spoon maple syrup

Above ingredients blended in blender
Then add 2 tbsp chia seeds n pop them in two jars. Leave in fridge overnight
Garnish with strawberries, granola and coconut.
